Miso-Peanut Butter Polvorones

The flavor matrix in this polvorón is defined by the two key ingredients, red miso paste and peanut butter. In case you didn’t know, although #miso is most popularly known in soup form, Miso is also used to provide the final punch to a savory recipe. Today, we added the Miso during a creaming stage or Speed 3 on the #thermomix #TM. My first time using the #butterfly whisk, it is now part of the #TM arsenal.

Once the ingredients form a paste, you simply remove them from the bowl and divide them into three. Rolled into logs 🪵, then sliced into medallions as you would an ice box cookie. As it bakes, the cookie spreads and forms a rigid, shale-like crust. The fragile cookie, is complimented with flavors from all over the world. In Mexico, these polvorónes are called aladinos, named after the Mexican peanut butter brand. Today, we introduced miso to the aladino.
