Rosca de Reyes 🇲🇽 Masas fermentadas (yeast raised dough)

This festive, delectable 👑 wreath is a holiday favorite, typically made and celebrated on January 6th. Thanksgiving weekend reminds me of the first roscas the panaderías start baking, as they’re a kickoff to the official holiday season. With all of the family gatherings, and colder weather, having a rosca to share, usually accompanied by a warm beverage, with loved ones, is always a welcomed delight. The craftsmanship and decorations behind this bread depict culture through evolution. I will elaborate more on an upcoming post about this beautiful bread and its historical significance. For now, biting into this first rosca reminded me of a buttery French 🇫🇷 brioche with cinnamon and how this has evolved adding regional ingredients like cinnamon from Mexico 🇲🇽 and figs in syrup. Traditionally candied strips of guava and quince are used to decorate the rosca. Today, we used candied blood orange wedges and cherries sprinkled with rock sugar.
